Phase 2 - Chili

Ingredients:

100 grams lean ground beef

1 cup chopped tomatoes

1/2 cup water

2 Tbs. minced onion

2 cloves garlic crushed and minced

Pinch of garlic powder

Pinch of onion powder

1/4 tsp. chili powder

Pinch of oregano

Cayenne pepper to taste (optional)

Salt and pepper to taste

Directions:

Brown ground beef in a small frying pan, add onions and garlic. Stir in tomatoes and water. Add spices an simmer slowly until liquid is reduced. The longer it cooks, the more tender and flavorful. Add a little water as needed to prevent burning. Serve with chopped green onion or tomato garnish.

Makes 1 serving (1 protein, 1 vegetable )

Phase 2-Shrimp Fried "Rice"

Ingredients

3.5 oz raw Shrimp

2 cups cabbage

1/4 cup fat free broth (Swanson)

1/2 tsp onion powder

1/2 tsp garlic powder or 1/4 tsp minced garlic

1 1/2 tsp Liquid Aminos

black pepper to taste

red pepper flakes (optional)

Directions

Finely shred cabbage in a food processor (or chop very fine)

Pre-heat large skillet or wok over med-hi heat.

Add cabbage, 2 T of broth and 1/2 tsp liquid aminos to pan and stir fry for 2 - 3 min. until slightly tender.

Remove cabbage and place on serving dish. Sprinkle with fresh black pepper.

Turn heat down to Med. Add shrimp, 2 T broth, onion powder, garlic, and 1 t Liquid Aminos.

Stir fry shrimp until they curl and turn pink.

Sprinkle with red pepper flakes.

Serve immediately over cabbage.

you can alter the amount of Liquid aminos to your personal taste…. you can also use water instead of broth.

Phase 3 Cauliflower Mac and Cheese

P3 Cauliflower Mac n Cheese (2nd week)

Ingredients

1/2 tsp

1 Head Cauliflower (diced in bite-size pieces)

1 tsp Salted Butter

1 Cup Heavy Cream

2 oz Plain Cream Cheese

1/2 tsp

1/2 Mixed Shredded Cheese

1/8 tsp , & (each)

Instructions

Preheat oven to 375 degrees

Grease a casserole or baking dish with butter (real grassfed goodness here, no margarine!)

Boil or steam cauliflower until slightly tender, about 5 minutes

Drain the cauliflower and shake off excess water with a fine mesh strainer

Transfer the cauliflower to the casserole and set aside

Bring cream to a simmer in a saucepan, then whisk in the cream cheese and mustard until combined

Incorporate 1 cup of the cheese, and seasonings and whisk just until the cheese melts, about 1 to 2 minutes

Remove from heat, pour over the cauliflower, and stir to combine (Try not to lick the saucepan,

it's hot! )

Top with the remaining 1/2 cup cheese and bake until browned, about 18 minutes

Serve your mac n cheese hot with a green salad or buttered vegetables

Phase 3 French Toast and Jam 2nd week

Ingredients

1 slice Ezekiel Bread

1 large egg

1 tbsp cream

¼ tsp cinnamon

stevia (to taste)

1 tsp coconut oil

Instructions

Whisk egg with cream, cinnamon, and sweetener. Pour into a shallow bowl or a saucer. Place bread in the egg mixture and allow the egg mixture to coat and absorb into the bread on one side, then turn and allow it to coat and absorb into the other side.

Heat the oil in a skillet over medium high heat. Place the bread in the skillet and cook until brown on one side. Turn and brown on the other side.

Serve with fresh strawberries .

Ingredients

Crust:

1.5 cups almond flour

4 tbsp salted butter

1 packet of stevia

1 tsp ground cinnamon

Filling:

8 oz cream cheese

2 large eggs

11 packets Stevia sweetener

1 tsp vanilla extract

Directions

I used an 8" pie pan. Oven at 350 degrees F. I cut it in 8 pieces.

Crust:

Mix 1 1/2 cups Almond meal/flour with the melted butter, 1 pkt of sweetener, cinnamon. Press in pie pan. Bake for 12 to 15 minutes until golden brown. Let cool before putting in the cheese cake filling.

Filling:

In the blender/food processor I put 8 oz cream cheese, 2 large eggs, 1/2 cup sweetener and 1 tsp vanilla. Mix it for a minute or so, you'll know when it's time. Pour into Almond crust and bake for about 20 to 25 minutes. It will be golden brown.
